What a huge month for change! In case you don't know, I'm literally moving out of my house today! It's bitter sweet. I'm so happy to be moving forward in the next chapter of my life and excited for what's to come. But at the same time, I'll miss the house I have thought of as my home with my son, Jackson. It's been the two of us and we've had so much fun together in our little castle. One of the many things we like to do together is cook. Jackson's favorite of course is cookies. So, I though I'd share what I consider to be a healthy (and yummy!!) way to make oatmeal raisin cookies. Now, before I get to the recipe, healthy doesn't mean calorie-less. It simply means they're natural and wholesome ingredients. They make a great breakfast. But, like anything, should be eaten in moderation and should be avoided as a late night snack. With that said ... ENJOY!
Ingredients
1-2 packet of Flax Plus Nature's Path Oatmeal
1-2 ripe banana peeled
1 tablespoon on peanut butter
1 tablespoon of coconut oil
1 handful of raisins
Method
Preheat the oven to 350 degrees and take out a baking sheet or aluminum foil. In a mixing bowl, mash all of the ingredients together. It's fun to use your hands. Once everything is mixed together, form 1-1.5 inch clusters and place on your baking sheet or aluminum foil. Place in the oven for about 10 minutes.
Enjoy and then back to the gym for CRUSH TIME!
